Healthy Cashew Butter Chicken Curry Recipe

 

This is an extremely quick recipe that’s very high in protein, extremely low in carbs and moderate on the fats! Flavoursome, fragrant and creamy as hell!
Ingredients
  • 50g white onion
  • 1/2 garlic clove
  • 175g chicken breast http://bit.ly/1obJVAG
  • 1 tsp ground coriander
  • sprinkle of nutmeg
  • 15g or 1tsp korma curry paste
  • 1tbsp coconut milk
  • 100ml unsweetened almond milk
  • 25g cashew butter
Steps
  1. Fry onion and garlic until softened
  2. Add the chicken breast  and continueon a medium heat until just cooked
  3. Once chicken is just cooked, add in coriander, nutmeg and seasonings for a minute or 2 to release aromas
  4. Then add in the rest of the ingredients and bring to a boil, simmering to desired consistency
