Healthy Slow Cooked Chicken Chilli Recipe

 

If you’ve got no time to cook or just fancy something quick and convenient to take to work during the week, this recipe couldnt be easier! Its mega mega high in protein, most of the carbs are fibrous and complex, it’s micronutrient dense and….its super low in fat!!

Ingredients

  • 1kg chicken breast, diced – http://bit.ly/1obJVAG
  • 1 green pepper
  • 1 onion
  • 2 cans of beans (i used 1 kidney and 1 cannelloni)
  • 1 jar of salsa
  • 1 can of chopped tomatoes
  • 2 stock cubes
  • spices and herbs of choice (i used bay leaf, chilli flake, oregano, salt and pepper)

Steps

  1. Put all ingredients in the slow cooker then give it a good stir
  2. set to cook on high for 3-4 hours or low for 6-8 hours
  3. If you want it to reduce, set to high with the lid off for about 30mins-ish
