Healthy Thai Tinned Fish Cakes Recipe

 

 

So much goodness coming from every angle in this recipe! High protein omega 3 packed fish which can sometimes taste boring is transformed into a flavoursome and easy meal! A vast range of vegetables full of micronutrients coming from different sources is always a good thing as the vitamins and nutrients will not be the same!
Ingredients
  • 2 cubes of frozen spinach
  • 130g of tinned fish (i used pink salmon)
  • 30g egg whites (1 egg white) – http://bit.ly/1mKO4Qx
  • fresh coriander
  • zest of 1 lime and a squeeze of its juice
  • 1/4 onion
  • 1 spring onion
  • 1/4 pepper (i used red)
  • chilli powder
  • ginger powder
  • fish seasoning (optional)
  • black pepper
  • 2 tsp fish sauce (nam-pla)
  • 1 tsp of curry paste (i used green)
  • 1 tsp of splenda
Steps
  1. Microwave the frozen spinach till just cooked through
  2. pre-heat grill
  3. Chop the onion, spring onion and pepper
  4. Chuck tinned fish, and the rest of the chopped ingredients in a bowl
  5. drian spinach
  6. add the egg whites and the rest of the seasonings
  7. add the lime zest and a bit of its juice
  8. mix up in with your hands!
  9. form about 4 small balls, placing each one on/under your grill
  10. grill till just warmed through/golden on top
  11. serve with whatever takes your fancy, goes lovely with some yogurt and some coriander and lime rice
